The Pyrenees stand out not only for their countless beautiful roads and mountain climbs, but also for the many delicious culinary specialties that come from here. This pressed or semi-hard uncooked curd cheese, made from pasteurized cow's milk, is distinguished by its yellow-red or black rind, which makes it so easy to recognize, and carries the protected geographical indication IGP (Indication G\u00e9ographique Prot\u00e9g\u00e9e) since 1996!
